A Mot Dang explainer, with a comic

One does not simply search for the best pad krapow in Chiang Mai

The answer exists. Aunties hold it, and motorbike-taxi riders, road crews and nurses on the noon shift, passed mouth to mouth along a network that opened when Chiang Mai did, in 1296. Search turned up in 1998. That is a 702-year head start, and the aunties are keeping it.

NaN, hungry, asks her phone for the best pad krapow in Chiang Mai. The results: a Top 10 from 2019 with six of ten closed, five stars for 'too spicy' and one star for 'too spicy', a shop pinned in a canal, a shop marked open 24 hours that sold out at 13:10, a 'hidden gem' in a mall food court, and a second Top 10 copied from the first. She asks the phone kindly; it sweats and says 'top ten?'. Beer rides up: 'Get on. We follow the hi-vis vests.' NaN: 'That's not an algorithm!' Beer: 'It is. Older than search, too.'

Auntie asks 'เอาอะไรลูก?', what'll it be? Over NaN's head floats the menu tree: pork minced, sliced or crispy; egg fried, omelette or runny; spice little, medium or deadly; extra or not; beans?! NaN freezes, then turns to the gas ring: 'Hello, beautiful. How many burners are you running?' The burner purrs. Beer orders in one breath: 'กะเพราหมูสับ ไข่ดาวไม่สุก เผ็ดๆ ไม่ใส่ถั่ว พิเศษ ราดข้าว ค่ะ!' Auntie: 'ได้เลยลูก!' The plate arrives glowing. NaN: 'Best krapow in Chiang Mai. LOGGED.' Next day the stools are stacked under the tamarind and a sign says ปิด ไปงานบวชหลาน, closed for a nephew's ordination. NaN: 'NOOO.' Beer: 'Her big sister cooks next door.' The sister waves them in: 'มาๆ ลูก!' It is even better, and Gai Chon is already at the table: 'Been here since lunch.' That night NaN types to the bots: best = who, when, which auntie, which egg. The 702-year head start

Chiang Mai, 1296. Search, 1998. 1998 − 1296 = 702. The dish itself is younger than both stories make it sound: the oldest recipe anyone has found is from 1954.

  1. 1296King Mangrai founds Chiang Mai, 12 April by the old calendar. Markets, temples, and the aunties' lunch network open the same week, give or take. ↗

Twelve reasons search can't find it

  1. It has no name.

    Its name is ร้านป้า, Auntie's, or 'under the tamarind', or 'opposite the 7-Eleven' (which one). Search indexes names. The soi indexes trees.

  2. Its sign belongs to someone else.

    If there is a sign, it may be a drink company's board with the shop's name in small letters, or last year's menu, or a bag of chilies.

  3. Two languages, nine spellings.

    Thai: กะเพรา (the dictionary's), กระเพรา (everyone else's, one letter from กระเพาะ, stomach), กะเพา. English: krapow, kaprao, gaprao, kra pao, kaphrao, krapao. A search for one misses the other eight.

  4. The pin is in the canal.

    A pin goes where whoever dropped it was standing, often the dessert place two sois later. Nobody moves it back.

  5. 'Open 24 hours.'

    Nobody edited the hours. The hours run from when the market run gets back to when the pork runs out.

  6. Closed today.

    An ordination, a funeral, a grandchild's sports day, rain, a hospital trip with mother. The post announcing it is the stools, stacked.

  7. The cook rotates.

    Mum Monday to Thursday, her son on Friday, the niece while Mum is at the market. One shop, three krapows, one listing.

  8. Spice is negotiated, not printed.

    Order in English and many kitchens cook for you, not for themselves. 'เผ็ดแบบคนไทย', Thai-spicy, is a different plate. One plate earns one star for 'too spicy' and one star for 'not spicy' on the same afternoon.

  9. Lists copy lists.

    A Top 10 can be written by someone who ate at three and read the other seven on another Top 10. Search ranks the list. Nobody ranks the lunch.

  10. The apps rank what is on the apps.

    Delivery apps sort by distance, promotions and ratings from deliveries. A wok that doesn't deliver ranks nowhere. And the apps' 2025 favourite was som tam with pickled crab anyway.

  11. Best moves daily.

    This morning's basil, today's chilies, the gas, the weather, how hungry the cook is. When floods hit the south in December 2022, holy basil in Trang went from 50–60 to 150 baht a kilo, and every cook there made a decision about leaves.

  12. Best is not a property of a shop.

    It belongs to a shop, a cook, a day, an hour, your order, your spice and your hunger: seven things at once. Search hands back a list, one thing long.

And one more for Chiang Mai: English Wikipedia files phat kaphrao under Bangkok and the central plains, not the Lanna north. An auntie up here, asked for the best krapow, may give directions to khao soi. ↗

Why every great kitchen ends up at three stars

NaN noticed it in America first. The good Chinese restaurants there settle around three stars, whatever they cook: New York style with fries and wings, Cantonese, Sichuan. Give any of them a few years and they drift to three. The kitchens are not all the same. The crowds walking in are.

A star measures how close one plate came to what one person wanted. A kitchen that cooks one thing well feeds everyone who walks in: people who wanted it Thai-spicy, people who wanted it mild, people who wanted it like the mall, people who wanted it like the shop back home. Each is right about their own lunch. Average them and you get the middle.

Then who writes pushes the middle around. A great lunch or a terrible one gets written up; a fine lunch doesn't. On Amazon, Hu, Pavlou and Zhang found nearly every product's reviews piled up at the two ends; when they had everyone review, the pile turned into a hump in the middle. ↗

And the soi's best reviewers never write at all. They come back. A regular is a five-star review that shows up as a helmet.

Slide the kitchen. Cook it Thai-spicy and the average settles near 2.9 stars; cook it mild, near 3.2; cook it like the mall, for nobody in particular, and it climbs past 4. Switch to the ones who come back and every kitchen lands near 4.8. The piles at both ends are the J that Hu, Pavlou and Zhang found.

The model: four crowds in equal shares want the plate at 2 (mild), 5 (like the mall), 9 (Thai-spicy) and anywhere (like some other shop). Stars = 5 − 0.55 × how far the plate is from what they wanted, plus a little mood, kept between 1 and 5. A diner at 1 or 5 stars is about five times likelier to write than one at 3. Regulars are the diners within 1.5 of the kitchen; the rest don't come back.

It is one of the main reasons Mot Dang doesn't carry star reviews. Right now we don't see what they would add. A place page holds what the street can check: the hours, the photos, where it is, what it serves.

PaRank · ป้าแรงก์

In 1998 Sergey Brin and Larry Page described PageRank. Picture someone clicking links at random, forever. The pages where they spend the most time rank highest, because important pages are the ones important pages point to. ↗

Chiang Mai runs the same arithmetic with mouths instead of links: a rider says where he eats, and whoever is there says where they eat. Where a hungry person ends up most often is the best krapow. Beer calls it PaRank, after ป้า, pa, aunt.

Same formula, two maps. On the web the lists point at each other and at the closed shop, so the closed shop wins. On the soi the rider, the crew and the nurses point at Auntie Daeng and her sister, so they win. The orange dot is the random rider; leave it running and its ticks settle onto the bars.

PR(p) = (1 − d) / N + d · Σ PR(q) / out(q)  ·  d = 0.85

d: 85% of the time the rider follows a recommendation; 15% of the time he gets distracted and rides somewhere at random. N: everyone on the map. out(q): how many places q recommends.

Beer's field method

Beer does operations. In operations you go to the gemba, the place where the work happens, and look, instead of reading the report. For krapow the gemba is the curb at 11:30.

  1. 11:30, ahead of the crews. Sold out by 13:00 is a review too.
  2. Helmets parked out front. Hi-vis vests. Uniforms: nurses, police, office lanyards.
  3. The delivery riders. Picking up is business. Sitting down to eat is a vote.
  4. The ตะหลิว on the wok, then the hiss: ฉ่า.
  5. The cough test. Chili in a hot wok stings the air three stalls away. If passers-by cough, someone is cooking with conviction.
  6. A motorbike-taxi rider's answer to พี่กินข้าวร้านไหน, where do you eat?
  7. The order, in Thai. The builder below writes it.
  8. On Tuesday it may be the son at the wok.

One plate, many plates

A krapow order gets questions back. These choices alone make 4,320 different plates, before anyone mentions fish sauce, sugar or which basil.

Beer's order in the comic: กะเพราหมูสับ ไข่ดาวไม่สุก เผ็ดๆ ไม่ใส่ถั่ว พิเศษ ราดข้าว. Long beans stay off by default here; the 1970 cookbook may file a complaint.

When the sign says best

Shop names up here promise a lot: Best Khao Soi, The Best Massage, a coffee อร่อยที่สุดในสันทราย, the most delicious in San Sai, a dipping sauce รสเด็ดที่สุดในโลก, the best in the world. A name like that is the owner's hope, said out loud, and good luck to them. It tells you nothing about Tuesday. For Tuesday, count helmets.

On Mot Dang, a place whose name claims the best carries a small line pointing here. The place page still holds what the street knows: hours, photos, the map.

kaphrao Holy basil, Ocimum tenuiflorum. Red and white kinds; the red smells stronger cooked.
โหระพา
horapha Thai sweet basil, O. basilicum var. thyrsiflora. The usual stand-in abroad. Not krapow.
